Most entrepreneurs spend months, sometimes years, developing a new business concept. For husband-and-wife entrepreneurs Sam and Nina Patel, the journey to creating CeCarré Pizza + Provisions began with an unexpected opportunity, a remarkably short deadline and a few cocktail napkins.
In March 2026, the couple made the decision to move away from an existing restaurant franchise and introduce an entirely new, independently developed concept at Boston’s Prudential Center. There was just one complication: They had approximately two weeks to make it happen, and they were traveling abroad.
While most vacationers might have been enjoying a break from work, the Patels were developing an entirely new restaurant brand. Nina was sketching branding ideas on cocktail napkins, while Sam was working on recipes and building the culinary foundation of what would soon become CeCarré Pizza + Provisions.
“When the opportunity presented itself to create CeCarré at the Prudential Center, we had an incredibly short amount of time to get the doors open, but we were determined,” said Nina Patel. “We were literally out of the country at the time. I was sketching branding ideas on the backs of cocktail napkins while Sam was developing recipes during our vacation.”
It was an unconventional beginning for a restaurant that the couple ultimately envisioned as something much larger than a single location.
An Unconventional Path to Entrepreneurship
For Nina, the road to hospitality was hardly a straight line.
Raised in Nashua, New Hampshire, she initially pursued a career in healthcare, studying biology and pre-med at Suffolk University before earning an MBA with a focus on the health sector from Boston University’s Questrom School of Business. She began her professional career in healthcare administration before ultimately discovering that entrepreneurship offered a different kind of opportunity to combine her business background with her creative interests.
Hospitality also had roots in her family history. Her paternal grandparents immigrated from India to New York following the Partition and built a new life through the food business, establishing an entrepreneurial example that would resonate with her own career.
Together, Nina and Sam brought their entrepreneurial interests and complementary skills to the restaurant industry. Their vision for CeCarré was to create something that blended culinary creativity, distinctive design and the convenience of fast-casual dining without sacrificing the hospitality traditionally associated with a full-service restaurant.
The foundation of that concept became Roman-style pinsa, known for its airy interior and crisp exterior, paired with freshly baked focaccia sandwiches and globally influenced ingredients.
Rather than limit themselves to traditional Italian offerings, the couple developed a menu that reflected a broader culinary perspective. Signature pinsas range from classic mozzarella and basil combinations to more adventurous creations featuring harissa chicken, mint aioli and sumac. House-made focaccia sandwiches, including combinations inspired by Mediterranean flavors, became another defining feature of the business.
For the Patels, however, the food was only one part of the vision.
Building the Business While Building the Brand
Launching CeCarré in just two weeks meant making decisions quickly and accepting that not every element of the concept could be realized immediately.
The couple prioritized opening the restaurant and introducing their food to customers, knowing that the brand’s physical environment, expanded menu and broader retail offerings would need to evolve.
“We knew exactly what we wanted CeCarré to become, but we had to build the concept in stages,” Nina explained. “This re-launch is our opportunity to finally bring that entire vision to life.”
That approach illustrates a familiar entrepreneurial challenge: balancing the urgency of getting a business operational with the patience required to develop a more ambitious long-term strategy.
The Patels began with a functioning restaurant and a distinctive culinary identity. Over the following months, their attention turned toward creating a more complete expression of the brand.
Their plans extended beyond pizza and sandwiches to include prepared foods, grab-and-go provisions, pastries and specialty beverages. Equally important was the environment in which customers would experience those offerings.
“We want to change the perception of what quick-service dining can look and feel like,” said Nina. “Great design and great food shouldn’t have to be reserved for special occasions.”
The goal was to develop a restaurant that could serve several purposes throughout the day: a quick lunch destination, a casual meeting place, a convenient stop for prepared foods or simply somewhere customers would enjoy spending time.
Thinking Beyond One Location
Although CeCarré was born out of an immediate business opportunity, the Patels have approached its development with a larger ambition.
Their long-term vision is to establish CeCarré as a recognizable, multi-location restaurant brand, one that combines an identifiable culinary program with a consistent design aesthetic and a flexible service model.
That ambition requires more than developing a successful menu. It means building an experience that can eventually be introduced in other markets while preserving what makes the original restaurant distinctive.
“CeCarré was always intended to be more than a pizza restaurant,” Nina said. “We wanted to create a place with its own personality, where the food, design and experience all work together.”
For the couple, the next phase of CeCarré represents an opportunity to put those ideas into practice, transforming what began as a rapid entrepreneurial pivot into a more deliberate foundation for future growth.
A New Chapter at the Prudential Center
On Monday, November 16, 2026, just eight months after introducing CeCarré, Sam and Nina Patel will unveil a dramatically reimagined version of their restaurant at Boston’s Prudential Center.
The 1,778-square-foot space has undergone an extensive transformation inspired by Parisian bistros and contemporary European design. Rich burgundy tones, walnut finishes, brass accents, marble and a dramatic floral installation will help establish the restaurant’s new identity. Seating will double from 17 to 34 guests, while dedicated grab-and-go and retail areas will introduce a more complete provisions experience.
The re-launch will also set the stage for an expanded menu, including pastry offerings in partnership with Lakon Paris Patisserie and the development of CeCarré Cloud, a specialty beverage concept envisioned by Sam.
For the Patels, the November opening represents far more than the completion of a restaurant renovation. It is the next chapter in a business that began with an unexpected opportunity, a bold decision and an extraordinarily compressed timeline.
What started with sketches on cocktail napkins is now taking shape as the flagship for a brand the couple hopes to bring to additional communities.
CeCarré Pizza + Provisions will celebrate its grand re-launch on Monday, November 16, 2026, at 800 Boylston Street inside Boston’s Prudential Center. For more information, visit www.cecarre.com.
